The French claim to the finest cooks in the world. That may be, but it was the Italians that taught them!! Yes and no, but the influence of the French Chef is unsurpassed in terms of understanding the complexities of food. Often feared and always enjoyed.
My Culinary training is French based and I worked at the Le Grand Monarque in Chartres, France under Chef Michele Mernier and Chef Fritz Blank at Deux Cheminee in Philadelphia. This is probably the single largest category of recipes. Bon Appétit......
