We Americans are so blessed. Jonathan Yardley of the Washington Post once wrote:
"There may well be as much to learn about a nation from the food and drink its people consume as from the laws it passes and the wars it fights....for food and drink her daily matters that intimately reflect this. In the taste of the people."
Foods come into a culture in four ways: (1) they are indigenous, meaning they are a natural part of the environment; (2) through peaceful immigration (3) through forced conquest and (4) developed as a fusion of the first three in ingredients and technique. We Americans have given as much as we have received.
The recipes are broken out by regions. Each region has its own rich history and influences. By the same token, as a mobile people, our foods do flow from one region to another and often overlap and complement each other.
